Recipe: Upside Down Pizza
This casserole is super easy, super yummy and super kid friendly! I’ve modified it from the original, and it’s totally versatile.
Ingredients (for the filling)
- 1 lb ground beef
- 1 onion (chopped)
- 1 container sliced button mushrooms*
- 1 pkg pepperoni
- 1 jar spaghetti sauce (your favorite brand will be great)
- 1 tsp minced garlic
- 2 cups shredded mozzarella
Ingredients (for the crust)
- 1 cup milk (at least 2% or full fat)
- 2 eggs
- 1 tsp oil
- 1 cup flour
- 1 tsp basil
- 1 tsp oregano
- garlic salt or regular salt and pepper
- 1/2 cup grated parmesan
Preheat oven to 400 degrees. Coat a 9X13 baking dish with nonstick cooking spray. Brown ground beef and onion until cooked, and drain. Add mushrooms and when soft add pepperoni and sauce and heat through. Pour into the baking dish and sprinkle with the mozzarella.
Mix milk, flour, eggs, and oil together until smooth. Add spices and cheese and after mixing well, pour over the ground beef mixture in the pan. Bake for 25-30 minutes (uncovered) until the crust is golden brown.
* You can add any of your favorite pizza toppings, such as peppers, spinach, etc. Like I said, this dish is extremely versatile and you can put almost anything in it.

Colin & I took Owen to his 1 year check up!! Dr. Harris is very pleased with Owen’s growth – she said he’s perfect (but then, we knew that).
